I know, I know, another day another bird. But this chicken recipe is too good not to share.
Whole 2 1/2 to 3 pound chicken - cut up
3 tablespoons coconut oil
2 inch piece of ginger julienned. (seems like a lot of ginger, trust me on this one)
1 tablespoon crushed chili flakes (go easy if you’d like)
2 teaspoons sweet paprika
3 to 4 cinnamon sticks
2 tablespoons lime or lemon juice
1 tablespoon honey
Salt to taste
Heat your pot or pan with the oil, add the ginger, crushed chili flakes, sweet paprika and cinnamon sticks. Let the ginger get golden brown (it’s coconut oil so the oil will froth up a little, that’s ok).
Add your bird, lime or lemon juice and and honey, mix it well. Lower the flame, put the lid on and let it cook for 20 minutes. Remove the lid, increase the flame to high and keep tossing the chicken with a spoon till all liquid has evaporated. Take off the flame, serve over some steamed rice and you are golden!
