Banana Leaf Green Chutney Fish (Salmon) with Coconut Rice
In the coastal area of India where Asha grew up, a fave memory is the sight of Kerala fishermen cooking up fresh catch on the beach over an open fire. Wrapping them in banana leaf parcels capture and intensify the flavors of the fish and the masala spice-rub. Served with coconut-scented rice. The chutney here is green reminiscent of the lush green rice fields of Kerala.
