So many of you have asked for a cooking class, and I have finally said yes. The name is a joke, of course. Curry does not hurry. Where I grew up in Kerala, a pot of curry is started early and left to arrive in its own time. The onions turn gold, the spices open in hot oil, and the kitchen fills up long before the food does. What I can teach you is how to make that pot feel easy. Which spice goes in first and which one waits. What to watch and what to ignore. How to cook by smell and by the color of the oil instead of a timer. We will make three.
